Eat Your Veggies, Dangit!

Gotta kid who's a carb addict? A husband who picks at innocent veggies with his fork? (That's Abbey and Lisa M.) Then LOOK NO FURTHER. I have found a Finn-Tested-Mother-Approved muffin that's wholesome and yummy, not to mention a clever little way to incorporate your Daily 5. Enjoy!
CARROT ZUCCHINI PINEAPPLE MUFFINS
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 1/2 c shredded carrot
2 c. shredded zucchini
20 oz. drained, crushed pineapple
3 c. flour (2 c. wheat, 1 c. white)
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
3/4 tsp. nutmeg
Combine the wet ingredients and then add them to the dry ingredients. Bake @ 350.
Muffins: 25-30 min. (I always check about 7 min. earlier so they're not too dry.)
Loaf: 45-60 min.

haha, Wonderful! I will have to give those a shot.
I have to tell you I have been a health nut this week! counting calories, veggies every meal, and gym, gym, gym:) since monday I have lost 3 pounds and plan to loose 5 more by next sunday:) (for MEXICO!!) :)

And Brian doesn't even pick at the vegies. He just flat-out refuses them! You KNOW I'm gonna have to try this recipe! Hey, didn't you say something about avocado smoothies at one point? What did you put in those?

sorry but that sounds disgusting! i know it is unlike me but i think it is just the thought of pineapple with veg. maybe banana instead. glad finn loves them - you will have to make them for us! xx
