In the Words of Our Governator, I'll Be Back.

My poor blog. Poor, poor blog. It's been neglected. Ignored. Avoided. And you can see the effects.
What IS it? The sweltering, wretched heat that begins in early spring and spills over into fall? The mental strain of toddler-rearing finally taking its toll?
This trend of technology overload that I have come to loathe with a passion?
Who knows. But one thing is for sure: I am sadly lacking that inspiration, that creative fun that has dominated my love for blogging these past 18 months. And a good hiatus from my blog is overdue. I need time away from that nagging call to the computer, the pressure of finding the right ideas, the right words.
So. Look for me again later this year. I know I will have lots to share after this break. Think fall treats. Think European travels. Think surprises. In the meantime, I will have loads of fun peeking in on your fun blogs and reading about your daily lives.

Simple Fun

Whew. What a busy week. What a busy month. Life certainly has been wonderfully hectic for us, but I always make certain there is time for simple fun. Everyday fun. The routine fun that shapes our personalities and jazzes up ordinary days.
Currently, Finn's simple fun is all about the water hose. And why not? You can wiggle the hose around to make crazy water shapes in the air, you can take big gulps of water from a never-ending fountain, AND you get to help Mom with all her watering needs. Pure joy.

Did I mention you can point out the cool airplanes that fly by every few minutes while you water? That's totally awesome.

And while this simple fun usually ends with a soaking wet Finn, angry that he wasn't allowed to water the concrete, it's worth it to watch someone become entirely fascinated with the everyday, simple discoveries in life. Thanks for bringing me back down to Earth for a while, Finn.

August

August: the official month of a new unpleasantry: the Terrible Twos.
Holey Moley, have we got a blossoming terror on our hands. The problem? He's the most adorable wonderful little terror I've ever beheld. And I'm beginning to understand one of the hardest parts of this season: learning to balance love with anger, patience with frustration. Finn is changing so fast, both physically and behaviorally, that I feel as though I don't know him very well anymore, and I find us needing to get reacquainted over and over again. Strange.

August: the official month of restless hearts...
...of not feeling quite satisfied with what I've got. And I despise that feeling. The idea of redecorating my bedroom has spilled over into a general discontentment wth almost every room of the house, which has led to a number of trips to Cost Plus, Pier 1, Target, Ikea and countless daydreamings of what things could be or should be. Word of caution: NEVER PAINT YOUR ROOM. This is a dangerous project that leads to undesirable cravings for material objects. Thankfully, since I'm very much a "phase person," I'm pretty confident that these feelings will blow over when something comes along to distract me.

August: the official month of new beginnings.
Not only am I returning to work next week with a new set of students and fresh starts, but I am too excited to have my little sis, Abbey, move back to our hometown. (This is only the beginning of my wicked little conspiracy to steal back each and every family member that has moved away. Mwoooaaahh.) Finally, a shopping buddy, a personal fashion consultant, a friend close by with whom I can dwell in boredom. Yay!

The White Way to Cook Authentic Asian Food

This is a fun post for all of you out there looking to make some yummy and AUTHENTIC Asian food! No measuring cups or recipes needed--just real, fresh ingredients...and three flavorful sauces.

It's true. Simple, real dishes. Feel free to try your hand at these two dishes that I love to make. First, the classic stir fry--an endless colorful combination of meats and vegetables. Stir fry is so versatile and yummy that I actually cook it at least once a week. Second, super flavorful and healthy lettuce wraps. And easy! (That's my favorite part because, as we all know, this white girl was raised on tuna casserole so this cuisine doesn't come that natural to me. By the way, your casserole rocks, Mom!)

But before I go any further with those dishes, you need, need, NEED to have these three sauces, which you can get in the Asian aisle at the grocery store.

Soy Sauce: any brand will do; however, I use the Golden Mountain Soy Sauce, which can only be found at an Asian grocery store. But its flavor is unbeatable!

Fish Sauce: If you're not a fishy person, not to worry! This sauce will not make your food taste like fish. It's super salty and flavorful, and a staple in Asian cuisine, especially Southeast Asia. It's made from fermented anchovies. Maybe I shouldn't have told you that. Heck, it will enhance your food so much you won't even care.


Oyster Sauce: another title that might make you squeamish, but this stuff goes in ev-er-y-thing. If you can't cook with this stuff, you might as well just kiss your authenticity (and flavor) good bye. Another reminder: this does not taste like oysters.


Now to the fun stuff! Measuring not necessary!
Stir Fry

Get a wok or dutch oven hot with a few glugs of olive oil. Meanwhile, thinly slice about a pound of beef. (I like the carne asada style beef.) Cut up some asparagus and tomatoes into large chunks. Slice up some red onion.
Get your condiments ready because the frying part goes fast: oyster sauce, soy sauce, black pepper, sugar.
Add the beef to the hot oil and stir for about one minute. Don't overcook the beef unless you want to eat rubber for dinner. Blech. Add a few good glug glugs of oyster sauce and a few glugs of soy sauce. Add a few pinches of sugar and a good grinding of black pepper. Stir it up well. (This should all be done in the first minute while your beef is cooking up.)
Toss in the veggies and stir around until the veggies begin to tenderize. (about a few minutes) Don't overcook the veggies. You want some texture there, not mushy veggies with rubber meat.
Taste! Too sweet? Add some soy sauce. Too salty? Add more sugar. Too bland? Add more oyster sauce.
Serve with steamy jasmine rice. The cool thing about this dish is that you can vary it up-pork, shrimp, beef, whatever floats your boat. And use the veggies you like. Delicious.
Lettuce Wraps
You need
: a can of water chestnuts chopped up finely. 1 lb. of ground pork. cilantro. onion, diced. garlic, chopped.
Get a dutch oven hot with oil. Add in some freshly chopped garlic (to your taste) and fry up for about 30 seconds. Stir constantly so you don't burn the garlic. Add the ground pork. Let that all cook up. When pork is no longer pink, add a few glugs of oyster sauce and a few glugs of fish sauce. Add a few pinches of sugar and some freshly ground black pepper. Incorporate.
Toss in your chopped water chestnuts and diced onion (any color). Let that fry up together until onions are slightly tender.
TASTE! Too bland? Add more oyster sauce. Too salty? Add more sugar. Too sweet? Add more fish sauce.
Turn off the heat. Add lots of frehly chopped cilantro. Spoon into fresh, crispy, whole romaine leaves. Yummy and authentic!

**Just a reminder: you'll notice that salt is not needed in either of these dishes, so just keep it in the cabinet. The fish sauce and soy sauce are very salty by themselves. But lots of freshly ground black pepper is a good thing. :)

Sunny (and Busy) Days

First off, let's put the disclaimer right out here that there will be no colorful posts filled with pictures of Finn and his crazy antics, none of me making strange faces into the camera or of Peou looking devilishly handsome without really trying. No. The sad truth is that our modest little camera has vanished. My personal thought is that it loved San Diego SO much that it decided to stay. But we will never really know. Until then, I will try strive to treat your eyes to pictures of the past. Perhaps even a few from Way Back When.
With only two more weeks until I return to work (which isn't really work) it's time to cram jam that summer to-do list. Here's what's been accomplished so far:
*Enjoyed a tremendous vacation in San Diego, which gave way to a fabulous tan
*Baked my first choclate ginger cake from scratch! Perhaps I soon will wean myself off THE BOX
*Planted two lovely white Crepe Myrtle trees in the front yard
*Painted the bedroom...no more drab! Actually, my room is receiving a full facelift. Maybe more about that in another post. Hopefully with pictures to share!
*Painted the dreaded backyard fence AND the deck. (Can I just say for the record that I LOVE PAINT? I love everything about it--a cheap, dramatic way to change something, anything. I even love washing the brushes and rollers at the end.)
*Took Finn for a visit to the huge San Diego Zoo. Sure I got lost on the way there AND back, but the actual zoo was nice
*Spent lots of time just enjoying our large, wonderful families and making tons of good memories

Although this summer has been exciting and productive, I would be totally lying if I told you I wasn't ready for autumn. In fact, there are two words that never fail to make my heart skip a beat: pumpkin spice.
But I am going to try, really try, to not speed things up-- to enjoy the current season, to rest peacefully in the here and now, and to not take for granted each and every precious moment that I am given through grace.
And speaking of living in the moment, I am now headed outside to absorb this *fabulous* triple digit weather and to indulge in a raspberry creamsicle. Happy weekend to you all!

Back to Reality

We're back! And other than a rotten sunburn and crazy frizzed out hair, our trip to San Diego was sinfully blissful. I almost felt guilty stuffing my face with shrimp wraps by the pool, partaking of the complementary drinks and hors d'oeuvres at the cocktail parties, and watching the sun go down against the harbor every night. BUT. My favorite thing of all? The one that I'm going to miss really, really badly? Not having to cook or clean for a whole week!
I always have fond memories of our trips and vacations, but nothing beats coming home to your own bed, your own quirky possessions, slipping back into The Routine. I think you'll agree that traveling is totally wonderful and exhilarating, but the rhythm of daily life is comforting, secure, predictable. Perhaps fulfillment lies somewhere in the balance between the two.

Welcome to Paradise!

We're here! It's been only one day in this exciting city and we're already having a great time. First. The ride down. This was supposed to be the ride from you know where, but alas, Finn did not cry ONE TIME. In fact, he didn't even whine. He was a prince. And I've got the photos to prove it:

The first night we had a beautiful walk along the promenade, which starts from our hotel and stretches along the bay. So far, I'm IN LOVE with the weather, minus the humidity, which does scary things to my hair.




The hotel is crazy! It's only 6 months old and it's got a water theme to it--so apropros. I keep thinking of ways I can redecorate my house to match the cool, contemporary decor of our room. I know it's cheesy, but--I really do like it! This is Finn's favorite spot in our room. He can look down on the huge shipping dock, watch airplanes zoom around the sky, and scope out the pool from 19 stories above.



In an overly ambitious attempt at tanning on the first day here, I am now donning a horrid sunburn from head to toe. Talk about overkill. I should've known I'm just not THAT girl who can bronze up.

On the Homefront:

Well, here it is again. The post where I tell you with my tail in between my legs that I am totally void of creativity, that life at this here household is ordinarily crazy, unexpected, and sometimes stressful but always satisfying.
Examples of some fun little daily twists:
*Air conditioner busts in the middle of JULY of all months
*Much-anticipated totally fabulous muffins turn out totally disgusting
*Peou's pants split right before an important presentation at work (sorry, Peou. That's just too good to leave out.)

The usual. Nothing fancy. Although I do sense some voodoo-ish nonsense at work here. Ow! Oy! There's that same stabbing pain I keep getting!

I am really looking forward to an exciting week in San Diego where I promise some great pictures and hopefully some adventurous tales to share with you!
